![]() Top of the mountainExploring the mountains of Laklouk, Lebanon, I discovered Sanaa Ghsein sitting in front of her tent. Sanaa used to be a nurse in the Beqaa Valley, which is the heart of agriculture in Lebanon, and is known for making cheese and labne (yogurt). She eventually moved to Laklouk, where she now makes her own fresh cheese and labne. She invited me in her tent and spoke with me about the process of making these products.
